Missing recipe

I took one for the team this morning. After coming to realize the recipe for the edamame salad Alton Brown made on Monday’s new episode was missing from FN’s recipe list for the show, I rewatched that portion to get the details. Oh, the the things I do for this blog.

Start with a 9x13 baking pan
Preheat oven at 400 degrees

In the baking pan, combine:
12 oz of shelled edamame fresh or frozen
1/2 c corn kernels
1/4 c diced scallions
1 clove garlic, minced
3/4 teaspoon kosher salt
1/4 teaspoon fresh black pepper
1 tablespoon olive oil

Stir to combine and roast 10-15 minutes until the edamame is a little brown

Cool completely

Add:
1 c chopped fresh tomatoes
1/4 c fresh chopped basil
1 tablespoon red wine vinegar

Stir to combine

Best to let the dish to sit a couple of hours.
Serve chilled or at room temperature.
